I discovered today that I did not bottle the chicken properly. Evidently, I was supposed to let the canner vent for ten minutes. The food is cooked, only it did not get hot enough. So, I will need to remove the lids, clean the glass rim with vinegar and reprocess, venting 10 minutes and canning at 15 lbs of pressure for 75 minutes. Yes, it can be recanned and it will be safe. For the second time this week, I get to learn the lesson of quality and have the willingness to "Do Again." Recanning is frugal (more frugal than throwing it out- cause it is still usable) and safe.
Only I am out of canning jar lids! So, my husband went to get some from a friend that bulk orderes them each year. I really want to replace my lids with Tattler reusable canning lids with their life time guaranty.
I will have to wait until tomorrow to reprocess the bottles. Meanwhile, today, I worked on getting the "Let Freedom Ring" daily devotional binder for the month of July up and available for our family and on my school and organization websites. It took eight hours to take the information, Julia, compiled and to reformat it for the pdf. file.
